So,when Jillian texted me yesterday on her way over from the grocery store asking me if I felt like nachos or pizza, I said... yes. Bring it all on! Taco Pizza baby!
I found a few recipes online that looked ok... but we just kind of did our own thing. It turned out so good that I wanted to share it with you!
Here's what you need:
3 Large Chicken Breasts (you will have leftover chicken)
1 Packet of Taco Seasoning (typically used with ground beef)
Ready-Made Pizza Crust
Shredded Mexi-Blend Cheese
Chopped Red Onion
Shreded Lettuce
Chopped Tomatoes
Sliced Olives
Sour Cream
Queso Sauce
How to make Chicken Taco Pizza:
Cut the chicken into chunks and cook it in a skillet with some olive oil. Once it's all the way cooked dump it all into a blender with about 1/4 cup of water and your taco seasoning packet. Shred your chicken all up in the blender, and make sure the spices get all mixed in as well. If you think you need more water, go for it! 1/4 cup is just an approximate measurement.
Once your chicken is shredded and seasoned spoon it onto the pizza crust until it is covered. You will have a lot of leftover chicken so be prepared for that. I just used mine up in a quesadilla today :) Once your crust is covered with the chicken, sprinkle the onion and shredded cheese on top. Just as much as you want... you know what you like
Bake it per the crust's instructions.
Once it is out of the oven add the lettuce, tomatoes, some more red onion and olives. Make it look pretty and take some pictures... then cut it up into pizza slices and eat it with sour cream, queso sauce... maybe some guacamole and salsa too!
Go crazy with it!!! It's your pizza :) If you think something would taste good, try it out! This is just how we made ours and it was great.
